Complex cherry like Pinot fruit aroma.The palate shows good concentration of typical Pinot Noir characters. These include cherries and strawberries. There is underlying spicey characters which increase complexity.Fruit parcels are selected and picked to maximise fruit flavour. The fruit is both hand and machine harvested with a small percentage of the hand harvested used for whole bunch inclusion. A combination of winemaking techniques are used to produce a final blend with complexity and balance. These include cold maceration prior to fermentation, inclusion of whole bunches and warm fermentation 30˚C to 32˚C. The components remain separate until final blending. Minimal handling and filtration is adopted to preserve fruit flavour.
This wine is made for early consumption and will mature well over the next 2-3 years in a good cellar. Suggested Cuisine: Enjoy with pasta dishes
