‘It’s called midnight cuvee because the chardonnay grapes are picked at night to retain the fruit’s delicate flavour. A blanc de blancs style that is made from chardonnay (with a pinch of pinot), it has a rich bouquet with hints of spiced pear and citrus. Loads of creamy bead too, with searing acidity and a fresh finish.’
